Ingredients

  • Mutton 400 gram
  • Cinnamon 2 small pieces
  • Cloves 6 number
  • Cardamom 5 number
  • Garlic 5 cloves
  • Ginger 1 small piece
  • Green chilies 2 number
  • Onion 1 number
  • Turmeric powder 0.5 teaspoon
  • Coconut milk 3 cup
  • Salt 1 teaspoon
  • Ghee 0.5 cup
  • Onions 2 number
  • Cashews 25 gram
  • Raisins 25 gram
  • Biryani rice 2 cup
  • Mutton stock and water 5 cup
  • Coriander leaves 1 bunch
  • Mint leaves 1 bunch
  • Garam masala powder 0.5 teaspoon

Instructions

  1. First, wash the mutton and pressure cook it for 15 minutes with the ingredients listed in group 2 until it's three-quarters done.
  2. Heat ghee in a heavy-bottomed pan and fry sliced onions until golden brown and crispy. Set aside for garnish.
  3. In the same ghee, quickly fry cashew nuts and raisins until golden brown. Remove and set aside with the fried onions.
  4. Now, fry the washed and drained biryani rice in the remaining ghee until fragrant and lightly toasted.
  5. Add the partially cooked mutton to the rice and mix gently. Pour in 5 cups of combined mutton stock and water. Bring to a simmer.
  6. Cook on low heat until the rice is fully cooked and the liquid is absorbed, stirring occasionally. Stir in half of the chopped coriander, mint, fried onions, cashews, and raisins. Sprinkle with garam masala.
  7. Once cooked, turn off the heat and transfer the biryani to a serving dish. Garnish generously with the remaining coriander, mint, fried onions, cashews, and raisins. Serve hot and enjoy!
