Ingredients

  • Mutton 1 kg
  • Onion 3 medium
  • Ginger-garlic paste 1 tablespoon
  • Green chilies 5 pieces
  • Tomato 2 medium
  • Mint leaves 1 cup
  • Coriander leaves 1 cup
  • Lemon juice 1 tablespoon
  • Chili powder 0.5 tablespoon
  • Turmeric powder 0.5 teaspoon
  • Garam masala 0.25 tablespoon
  • Coriander powder 0.25 tablespoon
  • Biryani masala 2.5 tablespoon
  • Oil 2 tablespoon
  • Salt 1 teaspoon
  • Basmati rice 3 cup
  • Water 6 cup
  • Ghee 2 tablespoon
  • Cinnamon sticks 2 pieces
  • Cloves 4 pieces
  • Bay leaf 1 piece
  • Cardamom 2 pieces
  • Fried onions 0.5 cup
  • Cashew nuts 15 pieces
  • Raisins 10 pieces
  • Pineapple essence 0.5 teaspoon
  • Saffron 0.1 pinch

Instructions

  1. Marinate the mutton with salt, turmeric, and garam masala. Lightly fry for enhanced flavor.
  2. Heat oil and sauté sliced onions until golden brown. Add ginger-garlic-green chili paste and cook until fragrant.
  3. Stir in chopped tomatoes, mint, and coriander. Add chili powder, coriander powder, biryani masala, and turmeric. Sauté well.
  4. Add the fried mutton and salt. Mix thoroughly, add lemon juice, cover, and cook until the mutton is tender. Pressure cook if needed.
  5. The mutton masala is now ready. Set aside.
  6. Wash basmati rice and drain for 15 minutes.
  7. Heat ghee in a pot and add cinnamon, cloves, bay leaf, and cardamom for aromatic infusion.
  8. Add 6 cups of water and salt. Bring to a boil, then add a squeeze of lemon juice.
  9. Add the drained rice to the boiling water. Lemon juice prevents sticking during cooking.
  10. Cook until the water is absorbed and the rice is perfectly cooked.
  11. Fry sliced onions, cashew nuts, and raisins in ghee until golden for garnish.
  12. Grease a pot with ghee. Layer cooked rice, then mutton masala. Repeat layers, drizzling ghee between each.
  13. Sprinkle chopped mint, coriander, fried cashews, and raisins between layers. Pineapple essence is optional for a fruity note.
  14. Layer rice and mutton masala again, finishing with a rice layer. Drizzle with a teaspoon of ghee.
  15. Garnish with fried onions, cashews, and raisins. Sprinkle with fresh mint and coriander leaves.
  16. Cover tightly and simmer (dum) on low heat for 15 minutes for a perfect blend of flavors.
  17. Delicious Mutton Biryani is ready to serve!
