- In a bowl, combine maida (all-purpose flour), yeast, sugar, and salt. Add butter and mix well with the dry ingredients until crumbly.
- Create a well in the center, add half of the egg and water, and knead to form a sticky dough. This dough is key for soft rolls.
- Cover the dough with a damp towel and let it rest for 1 hour, allowing it to double in size for fluffy chicken rolls.
- Once doubled, lightly flour your hands and divide the dough into lemon-sized portions. Roll each portion into an oblong roll shape.
- Arrange the shaped rolls on a maida-dusted plate and let them rest for 15 minutes, allowing them to double in size again for a lighter texture.
- Dip the doubled rolls in beaten egg, ensuring they are fully coated, then dredge them in breadcrumbs for a crispy exterior.
- Deep fry the breaded rolls in hot oil until golden brown and cooked through. Drain on paper towels.
- Prepare your favorite chicken filling separately. A spicy Kerala-style chicken filling works wonderfully!
