Ingredients

  • egg 2 count
  • grated coconut 4 tbsp
  • onion 6 count
  • kashmiri chilli powder 1.5 tsp
  • crushed dried chillies 0.5 tsp
  • black pepper powder 0.25 tsp
  • curry leaves 10 sprigs
  • salt 1 tsp
  • coconut oil 2 tbsp

Instructions

  1. Heat 2 tablespoons of coconut oil in a pan over medium heat.
  2. Add 6 chopped onions and salt to taste, and sauté until golden brown and softened.
  3. Add 10-12 curry leaves, 1.5 tsp Kashmiri chilli powder, and 0.5 tsp crushed dried chillies. Sauté for a minute until fragrant.
  4. Stir in 4 tablespoons of grated coconut and cook for 2-3 minutes, mixing well.
  5. Pour in 2 beaten eggs and quickly scramble until fully cooked. Add more coconut oil and curry leaves if desired for extra flavor.
