- grated coconut 4 tbsp
- onion 6 count
- kashmiri chilli powder 1.5 tsp
- crushed dried chillies 0.5 tsp
- black pepper powder 0.25 tsp
- curry leaves 10 sprigs
- salt 1 tsp
- coconut oil 2 tbsp

Instructions
- Heat 2 tablespoons of coconut oil in a pan over medium heat.
- Add 6 chopped onions and salt to taste, and sauté until golden brown and softened.
- Add 10-12 curry leaves, 1.5 tsp Kashmiri chilli powder, and 0.5 tsp crushed dried chillies. Sauté for a minute until fragrant.
- Stir in 4 tablespoons of grated coconut and cook for 2-3 minutes, mixing well.
- Pour in 2 beaten eggs and quickly scramble until fully cooked. Add more coconut oil and curry leaves if desired for extra flavor.
