- Shallots 10 count
- Green chilies 2 count
- Pepper powder 0.5 tsp
- Turmeric powder 0.125 tsp

- Maida (All-purpose flour) 5 tbsp
- Ginger 1 tsp
- Curry leaves 1 tbsp
- Salt 0.5 tsp

Instructions
- First, boil 5 eggs, peel them carefully, and make a small incision on one side of each egg. Gently scoop out the yolks using a spoon, being careful not to split the eggs. Keep the egg whites aside.
- Heat oil in a pan. Add 10 finely chopped shallots and 2 green chilies and sauté until the onions turn golden brown and fragrant.
- Add 1 teaspoon of finely chopped ginger to the pan and continue to sauté until fragrant, releasing its aroma.
- Add 1/8 teaspoon of turmeric powder, 1/8 teaspoon of chili powder, 1/2 teaspoon of pepper powder, and 1/2 teaspoon of salt to the sautéed mixture. Stir well to combine all the spices.
- Crumble the yolks of 2 boiled eggs and add them to the pan. Mix everything together thoroughly to create a flavorful masala.
- Add 1 tablespoon of fresh curry leaves to the mixture and stir well. Remove from heat and let the masala cool down completely before stuffing.
- Once cooled, shape portions of the masala mixture into small balls resembling egg yolks. Carefully fill the cavities of the egg whites with these masala balls.
- In a bowl, mix 5 tablespoons of maida (all-purpose flour) with a pinch of salt and water to create a thick batter. Seal the open side of each stuffed egg with this batter to prevent leakage.
- Heat oil in a pan for deep frying. Gently place the stuffed eggs in hot oil and fry until golden brown and crispy on all sides. Remove and drain excess oil. Serve hot and enjoy!
