Instructions
- First, create the sweet egg filling. Heat ghee in a pan over medium heat.
- Scramble 3 eggs in the ghee until fully cooked and fluffy.
- Stir in sugar and cardamom powder to the scrambled eggs, mixing well. Set the flavorful filling aside.
- Now, prepare the crepe batter. In a mixing bowl, whisk together maida (all-purpose flour), egg white, and a pinch of salt.
- Gradually add water to the mixture, whisking continuously to create a smooth, dosa-batter-like consistency.
- Heat a flat pan or griddle over medium heat. Pour a ladleful of batter to make thin, golden crepes (dosas).
- Place a spoonful of the prepared egg filling in the center of each crepe.
- Carefully fold the crepe to fully enclose the filling, creating neat rolls.
- Heat ghee in a pan for shallow frying over medium heat.
- Gently place the filled rolls in the hot ghee and shallow fry until golden brown and delightfully crispy on all sides.
- Serve Omana Pathiri hot as a delightful snack or a sweet dessert.
