- Plantain 1 kg
- Grated coconut 150 g
- Egg white 4 number
- Ghee 4 tsp
- Cardamom powder 1 tsp
- Sugar 200 g
- Roasted cashew nuts 100 g
- Raisins 100 g
- Oil 500 ml
- Breadcrumbs 100 g

Instructions
- Steam the plantains with their skins in a pressure cooker with 1 cup of water until one whistle. This softens them without making them mushy.
- While still warm, peel the cooked plantains and mash or blend until completely smooth.
- In a bowl, combine grated coconut, cardamom powder, roasted cashew nuts, and raisins. Mix well.
- Take a small portion of mashed plantain, roll into a ball, and gently flatten it on your ghee-greased palm.
- Place a teaspoon of the coconut-nut mixture in the center of the flattened plantain.
- Carefully shape the plantain around the filling, sealing it to form an Unnakkaya.
- Heat oil for deep frying in a frying pan over medium heat.
- Dip each Unnakkaya in egg white, then coat evenly with breadcrumbs.
- Deep fry the Unnakkaya until golden brown and crispy, turning occasionally.
- Remove and drain excess oil on paper towels. Serve the Kerala Unnakkaya hot and enjoy!
