- Basmati Rice 2 cups
- Cloves 4 pieces
- Cardamom 4 pieces
- Bay Leaves 2 pieces
- Cinnamon Sticks 6 pieces
- Lemon Juice 1 tbsp
- Fish 650 g
- Chili Powder 1 tsp
- Pepper Powder 0.5 tsp
- Turmeric Powder 0.25 tsp
- Salt 1 tsp
- Onions 3 medium
- Tomatoes 2 medium
- Yogurt 0.5 cup
- Ginger 2 tbsp
- Garlic 2 tbsp
- Green Chilies 6 pieces
- Coriander Powder 2 tsp
- Garam Masala 1 tsp
- Mint Leaves 1 handful
- Coriander Leaves 2 tbsp
- Oil 2 tbsp
- Ghee 2 tbsp
- Cashews 1 tbsp

Instructions
- Soak basmati rice in water for 20 minutes. Drain and set aside – this ensures fluffy rice.
- Boil water with cloves, cardamom, bay leaves, and cinnamon sticks. Add salt and the soaked rice. Cook until three-quarters done. Drain and gently spread the rice.
- Marinate fish with turmeric powder, chili powder, pepper powder, lemon juice, and salt for 20 minutes to infuse flavor.
- Shallow fry the marinated fish until partially cooked and set aside. This locks in the fish's moisture.
- Heat oil and ghee. Sauté onions, ginger, garlic, and green chilies until golden brown and fragrant.
- Add tomatoes and cook until softened. Then, add spice powders (coriander, turmeric, chili, garam masala) and sauté until fragrant.
- Stir in yogurt, mint, and coriander. Mix well and add salt to taste. This creates a rich and flavorful gravy.
- Gently place the fish into the gravy. Sprinkle with remaining garam masala. Cover and cook until the fish is cooked through and flaky.
