Instructions

  1. Soak basmati rice in water for 20 minutes. Drain and set aside – this ensures fluffy rice.
  2. Boil water with cloves, cardamom, bay leaves, and cinnamon sticks. Add salt and the soaked rice. Cook until three-quarters done. Drain and gently spread the rice.
  3. Marinate fish with turmeric powder, chili powder, pepper powder, lemon juice, and salt for 20 minutes to infuse flavor.
  4. Shallow fry the marinated fish until partially cooked and set aside. This locks in the fish's moisture.
  5. Heat oil and ghee. Sauté onions, ginger, garlic, and green chilies until golden brown and fragrant.
  6. Add tomatoes and cook until softened. Then, add spice powders (coriander, turmeric, chili, garam masala) and sauté until fragrant.
  7. Stir in yogurt, mint, and coriander. Mix well and add salt to taste. This creates a rich and flavorful gravy.
  8. Gently place the fish into the gravy. Sprinkle with remaining garam masala. Cover and cook until the fish is cooked through and flaky.
