- Basmati Rice 1 kg
- Raisins 20 pieces
- Cashew Nuts 15 pieces
- Green Peas 1 cup
- Capsicum 1 piece
- Green Chili 2 pieces
- Egg 2 pieces
- Ginger 1 tsp
- Soy Sauce 3 tsp
- Pepper Powder 1 tsp
- Beans 7 pieces
- Carrot 1 piece
- Onion 4 pieces
- Salt 2 tsp
- Oil 2 tbsp
- Ghee 2 tbsp

Instructions
- Wash 1 kg basmati rice thoroughly and soak for 30 minutes. Drain well to remove excess starch.
- Heat a frying pan with ghee and roast the drained basmati rice, stirring constantly, until it turns light brown and fragrant.
- Bring water to a boil in a pot with 2 teaspoons of salt.
- Add the roasted rice to the boiling water and cook for 12 minutes. Begin checking for doneness after 8 minutes.
- Drain the cooked basmati rice completely.
- Heat ghee in a frying pan and lightly fry the cooked rice in batches for extra flavor.
- Fry 4 finely chopped onions in oil until golden brown and crispy; set aside.
- Fry 7 finely chopped beans, 1 chopped carrot, 1 chopped capsicum, and 1 cup green peas in oil until tender-crisp; set aside.
- Fry 20 raisins and 15 cashew nuts until golden brown; set aside.
- Heat 1 tbsp of oil in a pan, add 1 tsp finely chopped ginger and 2 green chilies, and sauté until fragrant.
- Combine the fried vegetables, fried onions, raisins, cashew nuts, 3 tsp soy sauce, and 1 tsp pepper powder with the cooked basmati rice and mix well.
- Scramble 2 eggs with pepper powder in a separate pan and add to the fried rice. Mix thoroughly.
- Garnish with finely chopped spring onions. Serve hot and enjoy this delicious fried rice!
