Ghee Payasam Recipe | Kerala Navarathri Dessert

- Payasam Rice (Unakalari) 1 cup
- Jaggery 500 g
- Grated Coconut 1 cup
- Ghee 3 tablespoon
- Cardamom Powder 0.5 tsp
- Coconut Pieces 2 tablespoon

Instructions
- First, make jaggery syrup: dissolve 500g jaggery in 1.5 cups water. Strain to remove impurities and keep aside.
- Combine 1 cup payasam rice (unakalarari) with 3.5 cups water in a pressure cooker. Cook for 3 whistles, then reduce heat and simmer for 5 minutes.
- Release pressure completely. Transfer the cooked rice to a wide vessel.
- Pour the jaggery syrup into the rice and mix well to combine.
- Cook, stirring constantly, until the mixture boils and thickens. Add 1 tablespoon of ghee.
- Once thickening, add 1 cup grated coconut and mix thoroughly.
- Stir in another 1 tablespoon ghee and cardamom powder to taste. Mix well and remove from heat.
- Fry coconut pieces in ghee until golden brown and crispy. Garnish the payasam with these fried coconut pieces.
